Mici

The “little ones”: rolls of minced beef and lamb with garlic and spices, grilled without casings. In Bucharest they’re eaten with mustard, bread and beer.

  • Serves 4
  • 30 min

Ingredients

  • 500 g minced beef
  • 250 g minced lamb or pork
  • 4 garlic cloves
  • 1 teaspoon of bicarbonate of soda
  • 1 teaspoon each of cumin, thyme and paprika, and 1/2 of allspice
  • 150 ml cold beef stock
  • Salt
  • Mustard

How to make it at home

  1. Mix the meats with the crushed garlic, spices, salt and bicarbonate of soda.
  2. Add the stock gradually and knead for about 10 minutes, until the mixture is very well bound.
  3. Leave to rest in the fridge for at least 4 hours (ideally overnight).
  4. Shape into rolls of about 10 cm with wet hands.
  5. Grill them, turning, for about 10 minutes. Serve with mustard.

The trick: The bicarbonate makes them light: don’t skip it.

Where and what to eat

To eat like a local: the crama (wine-cellar tavern). The dishes you can’t miss are in the Romania guide.
