Papanași

Fried fresh-cheese doughnuts topped with a little ball, soured cream and sour cherry or blueberry jam. Romania’s best-loved dessert, from the kitchens of Moldavia.

  • Serves 4
  • 40 min

Ingredients

  • 500 g curd cheese or drained fresh cheese
  • 2 eggs
  • 50 g sugar
  • 180 g flour
  • 1 teaspoon of bicarbonate of soda
  • Lemon zest and vanilla
  • Oil for frying
  • Soured cream and sour cherry or blueberry jam

How to make it at home

  1. Mix the cheese with the eggs, sugar, zest and vanilla.
  2. Add the flour with the bicarbonate of soda to make a soft dough you can shape.
  3. Shape palm-sized rings and a little ball for each one.
  4. Fry them in oil at 170 °C until golden.
  5. Serve hot: the ring, soured cream, jam and the little ball on top.

The trick: Flour your hands to shape them: the dough is sticky.

Where and what to eat

To eat like a local: the crama (wine-cellar tavern). The dishes you can’t miss are in the Romania guide.
