Filloas

Galicia’s wafer-thin crêpes, a must in Ourense during Entroido (Carnival): eaten folded with sugar, honey or custard.

  • Serves 6
  • 45 min

Ingredients

  • 250 ml milk
  • 250 ml water
  • 3 eggs
  • 150 g flour
  • A pinch of salt
  • Pork fat or butter for greasing
  • Sugar or honey to serve

How to make it at home

  1. Whisk the milk, water, eggs, flour and salt into a very runny batter and leave it to rest for 30 minutes.
  2. Grease a frying pan with a piece of pork fat and heat it well.
  3. Pour in a little batter, swirl the pan so it covers the whole base and cook for a minute.
  4. Flip it, leave it a few seconds and repeat with the rest.
  5. Serve folded, with sugar or honey.

The trick: The first one always goes wrong: it’s for testing the pan.
