Xató

The winter salad of Sitges and the Garraf: endive with salt cod, tuna, anchovies and olives, dressed with a ñora and almond sauce similar to romesco.

  • Serves 4
  • 45 min

Ingredients

  • 1 curly endive
  • 200 g desalted salt cod, flaked
  • 1 tin of tuna
  • 8 anchovies
  • Arbequina olives
  • Sauce: 2 ñora peppers, 1 roasted tomato, 1 roasted head of garlic, 50 g toasted almonds, oil, vinegar and salt

How to make it at home

  1. Soak the ñoras, scrape out the flesh and blend it with the roasted tomato and garlic, the almonds, oil, vinegar and salt.
  2. Wash, dry and tear the endive.
  3. Put it in a serving dish with the cod, tuna, anchovies and olives.
  4. Dress with the sauce just before serving.

The trick: Sitges has a xató route every winter: each town defends its own sauce.
