Romesco sauce

Tarragona’s sauce of roasted ñora peppers, tomato, garlic, almonds and hazelnuts, served with fish, chargrilled vegetables and calçots.

  • Serves 6
  • 45 min

Ingredients

  • 4 ñora peppers
  • 2 tomatoes
  • 1 head of garlic
  • 50 g almonds and 50 g toasted hazelnuts
  • 1 slice of fried bread
  • 150 ml olive oil
  • 2 tablespoons of vinegar and salt

How to make it at home

  1. Soak the ñoras in hot water for 30 minutes and scrape out the flesh.
  2. Roast the tomatoes and the head of garlic in the oven at 200 °C for 25 minutes, then peel them.
  3. Blend the nuts with the bread, the ñora flesh, the tomato and the garlic.
  4. Gradually add the oil, vinegar and salt until you have a thick sauce.

The trick: Best in a mortar or only lightly blended: it should have some texture.
