Kampala’s street food: an omelette with tomato, onion and cabbage, rolled up in a chapati. The name comes from “rolled eggs”.

  • Serves 2
  • 30 min

Ingredients

  • Chapati: 200 g flour, 100 ml warm water, 2 tablespoons of oil, salt
  • 4 eggs
  • 1 tomato
  • 1/4 onion
  • A handful of finely shredded cabbage
  • 1/2 green pepper
  • Salt and oil

How to make it at home

  1. Knead the flour with the water, oil and salt, leave to rest for 20 minutes and roll out two thin discs.
  2. Cook them in a frying pan with a little oil until they have golden spots.
  3. Beat the eggs with the finely chopped vegetables and the salt.
  4. Make a thin omelette the size of the chapati and, before it sets completely, lay the chapati on top so they stick together.
  5. Flip it over, leave it for a minute and roll it up.

The trick: It’s eaten in the street, wrapped in paper, at any time of day.

Where and what to eat

To eat like a local: a rolex stall or a local restaurant. The dishes you can’t miss are in the Uganda guide.
