Scouse

The stew of Liverpool’s sailors, so much its own that the city’s people are called “Scousers”: lamb or beef with potato, carrot and onion, slow-cooked.

  • Serves 6
  • 3 h

Ingredients

  • 800 g stewing lamb or beef, diced
  • 1.2 kg potatoes
  • 3 carrots
  • 2 onions
  • 1 l beef stock
  • 2 bay leaves
  • Oil, salt and pepper
  • Pickled beetroot and bread to serve

How to make it at home

  1. Brown the meat in oil in a large pot.
  2. Add the chopped onion and carrot and soften for a few minutes.
  3. Add half the potatoes in small pieces (they’ll break down to thicken it) and the other half in large chunks.
  4. Cover with the stock, add the bay leaf and simmer very gently for about 2½ hours.
  5. Season and serve with pickled beetroot and buttered bread.

The trick: It’s even better the next day.
