Linzer Torte

Considered the oldest cake with a written recipe (1653): an almond or hazelnut pastry with spices, filled with redcurrant jam and topped with its signature lattice.

  • Serves 10
  • 1 h 15 min

Ingredients

  • 200 g flour
  • 200 g ground almonds or hazelnuts
  • 200 g cold butter
  • 150 g sugar
  • 2 egg yolks
  • 1 teaspoon of cinnamon and a pinch of clove
  • Lemon zest
  • 300 g redcurrant or raspberry jam
  • Flaked almonds

How to make it at home

  1. Mix the flour, nuts, sugar and spices, and rub in the cold butter. Add the yolks and zest and bring together into a dough.
  2. Chill the dough for 30 minutes.
  3. Press two thirds into a 26 cm tin, bringing it a little way up the sides, and spread with the jam.
  4. With the rest, make strips and form a lattice on top. Decorate the edge with flaked almonds.
  5. Bake at 180 °C for about 40 minutes. It’s better the next day.

The trick: Leave it to rest for a day: the pastry softens with the jam.

Where and what to eat

To eat like a local: the Beisl (Viennese tavern). The dishes you can’t miss are in the Austria guide.
