Salzburger Nockerl

A sweet soufflé with three peaks that echo the snowy mountains around Salzburg. It’s served straight from the oven, before it sinks.

  • Serves 4
  • 30 min

Ingredients

  • 6 egg whites
  • 3 egg yolks
  • 60 g sugar
  • 1 tablespoon flour
  • 1 sachet of vanilla sugar and lemon zest
  • 150 ml milk and a knob of butter
  • Cranberry or raspberry jam
  • Icing sugar

How to make it at home

  1. Warm the milk with the butter and pour it into an ovenproof dish over a layer of jam.
  2. Whisk the egg whites with the sugar to firm peaks.
  3. Gently fold in the yolks, flour, vanilla and zest.
  4. With a spatula, shape three large mountains in the dish.
  5. Bake at 200 °C for about 10 minutes, until golden outside and creamy inside. Dust with icing sugar and serve at once.

The trick: Don’t open the oven while they cook: they’ll collapse.
