Chipa

The cheese and cassava-starch bread of the Triple Frontier, a Guaraní legacy shared with Paraguay and Argentina. It’s bought fresh from the oven in the street, on the way to the falls.

  • Serves 6
  • 45 min

Ingredients

  • 500 g cassava starch
  • 200 g grated fresh or semi-cured cheese
  • 100 g butter
  • 2 eggs
  • 100 ml milk
  • 1 teaspoon of aniseed (optional)
  • Salt

How to make it at home

  1. Beat the butter with the eggs and salt.
  2. Add the starch, cheese and aniseed, and gradually work in the milk until you have a soft dough that doesn’t stick.
  3. Shape into rings or little balls.
  4. Bake at 200 °C for about 20 minutes, until golden.
  5. Eat them hot.

The trick: It’s similar to pão de queijo, but denser and with aniseed.
