Coxinha

São Paulo’s drumstick-shaped croquette, filled with shredded chicken and cream cheese. It’s the snack of bakeries and bars all over the city.

  • Serves 20
  • 1 h 30 min

Ingredients

  • 2 chicken breasts
  • 1 onion and 2 garlic cloves
  • 500 ml chicken stock
  • 250 g flour
  • 30 g butter
  • 100 g cream cheese
  • Parsley and chives
  • 2 eggs and breadcrumbs
  • Oil for frying

How to make it at home

  1. Cook the chicken in the stock and shred it. Sauté it with the onion and garlic and mix it with the cream cheese and herbs.
  2. Bring the cooking stock (500 ml) to the boil with the butter, add the flour all at once and stir until it comes away from the pan.
  3. Knead the warm dough until smooth.
  4. Take a portion, flatten it in your hand, add the filling and close it into a teardrop shape.
  5. Coat them in egg and breadcrumbs and fry at 180 °C until golden.

The trick: With oiled hands, the dough won’t stick as you shape them.

Where and what to eat

To eat like a local: the boteco (neighbourhood bar). The dishes you can’t miss are in the Brazil guide.
