Completo italiano

Santiago’s hot dog, so loaded it’s called a “completo”: sausage, tomato, mashed avocado and mayonnaise. “Italiano” because of the colours of the flag.

  • Serves 4
  • 20 min

Ingredients

  • 4 large hot dog buns
  • 4 frankfurters
  • 2 avocados
  • 2 tomatoes
  • Mayonnaise
  • Salt and lemon

How to make it at home

  1. Cook the sausages in hot water without letting it boil hard.
  2. Dice the tomato small with salt.
  3. Mash the avocado with salt and a few drops of lemon.
  4. Warm the buns by steaming them or in the oven.
  5. Assemble: sausage, tomato, a generous layer of avocado and mayonnaise on top.

The trick: In Chile they don’t hold back on the mayonnaise: it’s part of the completo.

Where and what to eat

To eat like a local: the picada (local eatery). The dishes you can’t miss are in the Chile guide.
