Chorrillana

A mountain of chips with strips of beef, fried onion and egg, for sharing. It was born in the port bars of Valparaíso and is now ordered all over Chile.

  • Serves 4
  • 40 min

Ingredients

  • 1 kg potatoes
  • 500 g beef, cut into strips
  • 2 onions, thinly sliced
  • 4 eggs
  • 2 garlic cloves
  • 1 splash of white wine or beer
  • Oil, salt, pepper and cumin

How to make it at home

  1. Cut the potatoes into chips and fry them until crisp.
  2. Stir-fry the meat with the garlic over a high heat, season and splash in the wine.
  3. In another pan, soften the onion until golden.
  4. Fry the eggs (or scramble them).
  5. Serve on a large platter: chips at the bottom, meat and onion on top and the eggs to crown it.

The trick: It’s a dish for the middle of the table, with a beer.

Where and what to eat
