Kuchen de murta

The cake of the German settlers of southern Chile, on Lake Llanquihue: a shortcrust base with fruit (murta, raspberry or blackberry) and a cream custard.

  • Serves 8
  • 1 h 15 min

Ingredients

  • 250 g flour
  • 125 g cold butter
  • 80 g sugar
  • 1 egg
  • 500 g red berries (murta, raspberry or blueberry)
  • For the custard: 200 ml cream, 2 eggs, 80 g sugar and 1 tablespoon of cornflour

How to make it at home

  1. Rub the flour into the diced butter with the sugar and egg until it forms a dough. Chill for 30 minutes.
  2. Line a 26 cm tin and prick the base.
  3. Spread the fruit over the pastry.
  4. Whisk the cream with the eggs, sugar and cornflour and pour it over the top.
  5. Bake at 180 °C for about 40 minutes, until the custard sets and the pastry is golden.

The trick: With murta (a berry from southern Chile) it tastes of Llanquihue; with raspberries it’s very similar.
