Štrukli

Thin pastry filled with curd cheese and cream, boiled or baked. It’s the dish of Zagreb and its region, the Zagorje, and part of Croatia’s intangible heritage.

  • Serves 6
  • 1 h 30 min

Ingredients

  • 300 g flour
  • 1 egg
  • 150 ml warm water
  • 2 tablespoons oil
  • 500 g curd cheese or cottage cheese
  • 2 eggs
  • 200 ml soured cream
  • 200 ml cooking cream
  • Butter and salt

How to make it at home

  1. Knead the flour with the egg, water, oil and salt into an elastic dough. Leave it to rest for 30 minutes.
  2. Mix the curd cheese with the eggs, soured cream and salt.
  3. Stretch the dough on a floured cloth until very thin, spread with the filling and roll it up.
  4. Cut 5 cm pieces by pressing with the edge of a plate to seal them.
  5. Place them in a buttered dish, cover with cream and bake at 200 °C for about 30 minutes, until golden.

The trick: Cutting them with a plate, as grandmothers do, seals the edges.

Where and what to eat

To eat like a local: the konoba (tavern). The dishes you can’t miss are in the Croatia guide.
