Koláče

Round yeast-dough pastries with a filling in the centre (curd cheese, plum, poppy seed), typical of Moravia, the Brno region, and of Czech weddings.

  • Serves 16
  • 2 h

Ingredients

  • 500 g flour
  • 20 g fresh yeast
  • 250 ml warm milk
  • 80 g sugar
  • 2 egg yolks
  • 80 g butter
  • Fillings: curd cheese with sugar and vanilla, plum jam (povidla), poppy seeds cooked with milk and sugar
  • For the crumble: 50 g flour, 50 g sugar, 50 g butter

How to make it at home

  1. Knead the flour with the yeast, milk, sugar, yolks and butter into a soft dough. Leave to rise for 1 hour.
  2. Divide into balls, flatten them and make a hollow in the centre.
  3. Fill with curd cheese, plum or poppy seed.
  4. Rub the crumble ingredients together with your fingers and sprinkle over the top.
  5. Leave to rest for 20 minutes and bake at 180 °C for about 20 minutes.

The trick: At a Moravian wedding, several fillings are served on the same tray.

Where and what to eat
