Vepřo knedlo zelo

Roast pork, knedlíky and sauerkraut: the most classic trio in Prague’s beer halls, with a pint of Czech beer.

  • Serves 4
  • 2 h 30 min

Ingredients

  • 1 kg pork shoulder or neck
  • 1 tablespoon of caraway seeds
  • 4 garlic cloves
  • 2 onions
  • 500 g sauerkraut
  • 1 apple
  • 1 tablespoon of sugar, and flour
  • Lard, salt and pepper
  • Knedlíky to serve

How to make it at home

  1. Rub the pork with salt, caraway and crushed garlic and put it in a roasting tin with a chopped onion and a glass of water.
  2. Roast at 180 °C for 1½ hours, basting it often with its juices.
  3. Soften the other onion in lard, add the sauerkraut, the grated apple, the sugar and a little water, and cook for 30 minutes.
  4. Thicken the sauerkraut with a tablespoon of flour.
  5. Serve the pork sliced with its juices, the sauerkraut and the knedlíky.

The trick: Caraway is essential: it’s the flavour of Czech cooking.
