Beer goulash

In Pilsen, the city of pale lager, Czech goulash is braised in beer and served with knedlíky and raw onion.

  • Serves 6
  • 2 h 30 min

Ingredients

  • 1 kg diced beef shin or chuck
  • 3 onions
  • 2 tablespoons of sweet paprika
  • 1 teaspoon of caraway and 1 of marjoram
  • 3 garlic cloves
  • 2 tablespoons tomato purée
  • 500 ml pale pilsner-style lager
  • Lard, flour, salt and pepper

How to make it at home

  1. Soften the onion in lard until golden.
  2. Add the meat and brown it, then the paprika, caraway and tomato.
  3. Pour in the beer and add water to cover. Cook covered over a low heat for 2 hours.
  4. Add the crushed garlic and marjoram at the end and thicken with a little flour if needed.
  5. Serve with knedlíky and rings of raw onion.

The trick: Lots of onion: as much as meat.
