Sol over Gudhjem

“Sun over Gudhjem”: smoked herring from the island of Bornholm on rye bread, with a raw egg yolk in the centre, chives and radishes. Bornholm is famous for its smokehouses.

  • Serves 4
  • 15 min

Ingredients

  • 4 smoked herrings (or smoked mackerel), filleted
  • 4 slices of rye bread
  • Butter
  • 4 very fresh egg yolks
  • 1 red onion
  • Radishes
  • Chives
  • Coarse salt and pepper

How to make it at home

  1. Butter the bread.
  2. Lay the smoked herring fillets on top, skinned and boned.
  3. Place a red onion ring in the centre and put a raw yolk inside it.
  4. Surround with sliced radishes and chopped chives.
  5. Finish with coarse salt and pepper.

The trick: The yolk is the “sun”: it must come from a very fresh egg.
