Äggakaka

The thick egg pancake of Skåne, the Malmö region, cooked in a frying pan and served with crispy bacon and lingonberry jam.

  • Serves 4
  • 35 min

Ingredients

  • 6 eggs
  • 150 g flour
  • 600 ml milk
  • 1 pinch of salt
  • 300 g thick-cut bacon or pancetta
  • Butter
  • Lingonberry jam

How to make it at home

  1. Whisk the flour with half the milk until smooth, then add the rest of the milk, the eggs and salt.
  2. Fry the bacon until crisp and set aside.
  3. Pour the batter into a deep frying pan with the bacon fat and a little butter.
  4. Cook over a low heat until the base sets, flip it with a plate and finish the other side.
  5. Serve in wedges with the bacon and jam.

The trick: Low heat and patience: it should set without burning.

Where and what to eat

To eat like a local: a husmanskost place (home cooking). The dishes you can’t miss are in the Sweden guide.
