Basler Läckerli

Basel’s biscuits of honey, almonds, spices and candied peel, glazed with sugar. They’ve been made for more than 700 years and are the city’s classic gift.

  • Serves 30
  • 1 h

Ingredients

  • 250 g honey
  • 150 g sugar
  • 150 g chopped almonds
  • 100 g candied orange and lemon peel
  • 1 tablespoon of cinnamon and a pinch of clove and nutmeg
  • 50 ml kirsch
  • 300 g flour
  • 1 teaspoon of bicarbonate of soda
  • Glaze: 150 g icing sugar and 3 tablespoons of water or kirsch

How to make it at home

  1. Warm the honey with the sugar until dissolved, without boiling.
  2. Add the almonds, candied peel, spices and kirsch.
  3. Work in the flour with the bicarbonate and knead while warm.
  4. Roll the dough out to half a centimetre on baking paper and bake at 200 °C for about 15 minutes.
  5. While it’s hot, brush with the glaze and cut into rectangles.

The trick: Cut them while hot: cold, they break.

Where and what to eat

To eat like a local: the Beiz (local tavern). The dishes you can’t miss are in the Switzerland guide.
