Khinkali

The dumplings of the Caucasus mountains, with broth inside, held by the knot and bitten carefully to sip the juice. In Kazbegi they’re eaten by the dozen.

  • Serves 4
  • 1 h 30 min

Ingredients

  • 500 g flour
  • 250 ml water
  • 1 teaspoon salt
  • 500 g mince, half beef and half pork
  • 1 grated onion
  • 2 garlic cloves
  • 1 teaspoon of cumin and black pepper
  • Chopped coriander
  • 200 ml cold water

How to make it at home

  1. Knead the flour with the water and salt into a firm dough. Leave to rest for 30 minutes.
  2. Mix the meat with the onion, garlic, spices, coriander, salt and the cold water, until it’s absorbed.
  3. Roll out the dough and cut 12 cm circles.
  4. Put filling in the centre and pleat the edges upwards (the more pleats the better), closing them in a knot.
  5. Cook them in boiling salted water for about 12 minutes. Serve with black pepper.

The trick: The knot isn’t eaten: it’s left on the plate to keep count.
