Khachapuri imeruli

The round khachapuri of Imereti, the Kutaisi region: dough filled with salty cheese, cooked in a frying pan or the oven. It’s the everyday cheese bread all over Georgia.

  • Serves 4
  • 1 h 30 min

Ingredients

  • 400 g flour
  • 250 ml yoghurt or kefir
  • 1 egg
  • 1 teaspoon of bicarbonate of soda
  • 1 teaspoon salt
  • 500 g imeruli cheese or a mix of mozzarella and feta
  • 30 g butter

How to make it at home

  1. Mix the yoghurt with the egg, bicarbonate of soda and salt, and add the flour to make a soft dough. Leave to rest for 20 minutes.
  2. Mix the crumbled cheese with an egg if you want it juicier.
  3. Divide the dough in 2, roll out circles, put a ball of cheese in the centre and close it like a pouch.
  4. Flatten it with your hands into a 1 cm-thick disc.
  5. Cook it in a covered frying pan with butter over a medium heat, 6 minutes on each side, or in the oven at 220 °C. Brush with butter.

The trick: A mix of mozzarella and feta: the closest thing to Georgian cheese.

Where and what to eat

To eat like a local: a khinkali house. The dishes you can’t miss are in the Georgia guide.
