Kubdari

The meat pie of Svaneti, the mountain region around Mestia: hand-chopped meat with onion, garlic and Svan spices, baked in a round loaf.

  • Serves 4
  • 2 h

Ingredients

  • 500 g flour
  • 7 g dried yeast
  • 300 ml warm water
  • 500 g hand-chopped beef and pork
  • 2 onions
  • 4 garlic cloves
  • 1 teaspoon each of cumin, ground coriander, fenugreek and chilli (or Svan salt)
  • Salt

How to make it at home

  1. Knead the flour with the yeast, water and salt. Leave to rise for 1 hour.
  2. Mix the meat with the very finely chopped onion and garlic, the spices and salt.
  3. Divide the dough in 2, roll out circles, add half the meat and close it like a pouch.
  4. Flatten it into a 2 cm disc and make a small hole in the centre to let the steam out.
  5. Bake at 220 °C for about 25 minutes and brush with butter.

The trick: Meat chopped with a knife, not minced: it stays juicier.

Where and what to eat

To eat like a local: a khinkali house. The dishes you can’t miss are in the Georgia guide.
