Khachapuri adjaruli

The boat-shaped cheese bread of Adjara, the Batumi region, with an egg yolk and a knob of butter in the centre that you stir into the melted cheese. You eat it by tearing off the crust and dipping it.

  • Serves 4
  • 2 h

Ingredients

  • 500 g flour
  • 7 g dried yeast
  • 300 ml lukewarm milk
  • 1 teaspoon of sugar and 1 of salt
  • 2 tablespoons oil
  • 300 g sulguni or mozzarella cheese
  • 200 g feta or imeruli cheese
  • 4 egg yolks
  • 50 g butter

How to make it at home

  1. Knead the flour with the yeast, milk, sugar, salt and oil. Leave to double in size.
  2. Mix the grated and crumbled cheeses with a little water or milk.
  3. Divide the dough into 4, roll out ovals and roll the two long sides towards the centre, pinching the ends: it forms a boat.
  4. Fill with the cheese, brush the edges with egg and bake at 230 °C for about 12 minutes.
  5. Take it out, put an egg yolk and a knob of butter in the centre and bake for 1 more minute. Stir at the table.

The trick: Stir the egg into the hot cheese and dip pieces of the crust into it.

Where and what to eat

To eat like a local: a khinkali house. The dishes you can’t miss are in the Georgia guide.
