Chicken kelaguen

The Chamorro dish at every fiesta in Guam: grilled chicken chopped and dressed with lemon juice, grated coconut, spring onion and chilli. It’s eaten cold, often with coconut flatbreads.

  • Serves 4
  • 45 min

Ingredients

  • 600 g chicken thighs
  • Juice of 4 lemons
  • 100 g fresh or desiccated grated coconut
  • 4 spring onions
  • 2 hot red chillies
  • Salt

How to make it at home

  1. Grill or griddle the chicken until it’s cooked through and slightly charred.
  2. Let it cool a little, remove the skin and chop it very finely with a knife.
  3. Mix the chicken with the lemon juice, the chopped spring onion and chilli, and the salt.
  4. Add the grated coconut and mix well.
  5. Leave it in the fridge for 15 minutes before serving.

The trick: The lemon “cooks” the meat a little further: adjust it to how sharp you like it.
