    Short days and storms

In winter it gets dark very early and Atlantic storms can close coast roads and ferries to the islands.

What to do: For the west coast, May to September is better; in winter, Dublin and the cities.

Seafood chowder

The creamy fish and seafood soup of Ireland’s west coast, with salmon, white fish and mussels. In Galway it’s eaten in the harbour pubs with brown bread.

  • Serves 4
  • 45 min

Ingredients

  • 300 g white fish
  • 200 g salmon
  • 200 g smoked fish (haddock or cod)
  • 500 g mussels
  • 1 leek, 1 carrot and 1 celery stick
  • 2 potatoes
  • 500 ml fish stock
  • 300 ml cream
  • Butter, dill, salt and pepper

How to make it at home

  1. Steam the mussels open with a little wine or water and keep the strained liquid.
  2. Soften the chopped leek, carrot and celery in butter.
  3. Add the diced potatoes, the fish stock and the mussel liquid, and simmer for 15 minutes.
  4. Stir in the cream and the diced fish and cook gently for 5 minutes.
  5. Add the mussels and dill and season.

The trick: The smoked fish is what gives it its Irish flavour.
