    Short days and storms

In winter it gets dark very early and Atlantic storms can close coast roads and ferries to the islands.

What to do: For the west coast, May to September is better; in winter, Dublin and the cities.

Irish coffee

Hot coffee with Irish whiskey and sugar, topped with cream. It was invented in the 1940s in Foynes, near Limerick, for frozen passengers off the transatlantic flying boats.

  • Serves 1
  • 10 min

Ingredients

  • 40 ml Irish whiskey
  • 120 ml very hot freshly made coffee
  • 2 teaspoons of brown sugar
  • 50 ml whipping cream

How to make it at home

  1. Warm the glass with hot water and pour it away.
  2. Add the sugar and coffee and stir until dissolved.
  3. Add the whiskey.
  4. Whip the cream just enough to thicken it while it’s still pourable.
  5. Pour it over the back of a spoon so it floats on top. Don’t stir: you drink the coffee through the cream.

The trick: The sugar is necessary: it’s what makes the cream float.
