Aljotta

The fish soup of Marsaxlokk’s fishermen, with lots of garlic, tomato, rice and herbs. It’s eaten by the harbour full of colourful luzzu boats.

  • Serves 4
  • 50 min

Ingredients

  • 600 g white fish (with the head for the stock)
  • 1 onion
  • 6 garlic cloves
  • 3 tomatoes
  • 50 g rice
  • Mint, marjoram and parsley
  • Juice of 1 lemon
  • Oil, salt and pepper

How to make it at home

  1. Make a stock with the head and bones, half the onion and water, 20 minutes. Strain.
  2. Fry the rest of the onion and the garlic, add the tomato and cook for 5 minutes.
  3. Add the stock and rice and cook for 12 minutes.
  4. Add the fish in pieces and the herbs and cook for 5 minutes more.
