Stuffat tal-fenek

Rabbit stewed with red wine, tomato and garlic, Malta’s national dish. It’s served in two courses: the sauce with spaghetti, then the rabbit.

  • Serves 4
  • 2 h

Ingredients

  • 1 rabbit, cut into pieces
  • 500 ml red wine
  • 1 onion
  • 6 garlic cloves
  • 400 g crushed tomatoes
  • 2 tablespoons tomato purée
  • 200 g peas
  • Bay leaf, thyme, salt and pepper
  • Spaghetti

How to make it at home

  1. Marinate the rabbit in the wine with the garlic and bay leaf overnight.
  2. Drain, pat dry and brown it in oil.
  3. Fry the onion, add the tomato, the purée and the wine from the marinade.
  4. Return the rabbit and cook covered over a low heat for 1½ hours; add the peas at the end.
  5. Toss some of the sauce with spaghetti as a first course and serve the rabbit as the main.

The trick: In Malta they hold a fenkata: a communal rabbit feast among friends.
