Norwegian bacalao

In Ålesund, capital of the dried salt cod (klippfisk) that Norway exports to Portugal, Spain and Brazil, it’s stewed the Iberian way: with tomato, potato, onion and olives.

  • Serves 4
  • 1 h 15 min

Ingredients

  • 600 g desalted salt cod
  • 600 g potatoes
  • 2 onions
  • 400 g crushed tomatoes
  • 1 red pepper
  • 3 garlic cloves
  • 1 chilli
  • Black olives
  • Olive oil

How to make it at home

  1. Gently fry the onion, garlic and pepper in oil.
  2. Add the tomato and chilli and cook for 10 minutes.
  3. Layer sliced potato, pieces of cod and sauce in a casserole.
  4. Cook covered over a low heat for about 40 minutes, without stirring.
  5. Add the olives at the end.

The trick: It’s a dish that went there and back: the cod travelled south and returned to Norway with tomatoes.
