Bergensk fiskesuppe

Bergen’s fish soup, white and creamy, with root vegetables, cream and a sweet-and-sour touch of vinegar and sugar. It’s eaten at the fish market by the harbour.

  • Serves 4
  • 50 min

Ingredients

  • 1 l fish stock
  • 400 g white fish (cod, haddock) and 200 g salmon
  • 1 carrot, 1 parsnip, 1/4 celeriac and 1 leek
  • 200 ml cream
  • 2 egg yolks
  • 1 tablespoon of vinegar and 1 of sugar
  • Chives, salt and pepper

How to make it at home

  1. Cut the vegetables into thin strips and cook them in the stock for 10 minutes.
  2. Add the diced fish and simmer gently for 5 minutes.
  3. Whisk the yolks with the cream and stir them into the stock without letting it boil.
  4. Season with the vinegar, sugar, salt and pepper.
  5. Serve with chives.

The trick: The yolks thicken the soup: don’t let it boil or they’ll curdle.
