Sodd

The festive soup of Trøndelag, the Trondheim region: a clear broth with meatballs, diced lamb and beef, carrot and potato. It’s served at weddings and celebrations with flatbrød.

  • Serves 6
  • 2 h 30 min

Ingredients

  • 800 g lamb or beef, diced
  • 400 g minced meat
  • 1 egg and 1 tablespoon of potato starch
  • Nutmeg and ground ginger
  • 3 carrots
  • 4 potatoes
  • Salt and pepper

How to make it at home

  1. Simmer the diced meat in salted water for 1½ hours, skimming off the foam.
  2. Mix the mince with the egg, starch, spices and salt, and shape into small meatballs.
  3. Cook the meatballs in the broth for 10 minutes.
  4. Add the sliced carrot and cook for 15 minutes more.
  5. Serve with boiled potatoes on the side and crisp flatbread.

The trick: The broth must stay clear: skim it well at the start.
