Cebu lechón

Cebu’s whole roast pig, stuffed with lemongrass, garlic and spring onion, so tasty it’s eaten without sauce. At home it’s made with a rolled piece of pork belly (lechon belly).

  • Serves 6
  • 3 h 30 min

Ingredients

  • 1.5 kg skin-on pork belly in one piece
  • 4 lemongrass stalks
  • 1 head of garlic
  • 1 bunch of spring onions
  • 4 bay leaves
  • 1 tablespoon of black pepper
  • Coarse salt
  • Vinegar for the skin

How to make it at home

  1. Dry the skin very well and leave it uncovered in the fridge overnight.
  2. On the meat side, season with salt and pepper and spread over the crushed lemongrass, garlic, spring onion and bay leaf.
  3. Roll up the belly with the skin outside and tie it with string.
  4. Brush the skin with vinegar, salt it and roast at 160 °C for 2½ hours.
  5. Turn up to 230 °C and roast for 20–30 minutes more, until the skin crackles and blisters.

The trick: Bone-dry skin is the secret to the crackling.

Where and what to eat

To eat like a local: the carinderia (local canteen). The dishes you can’t miss are in the Philippines guide.
