Vigan empanada

A fried rice-flour pastry, orange from annatto, filled with green papaya, Vigan longganisa and a whole egg. A Spanish legacy in the colonial town of Vigan.

  • Serves 6
  • 1 h

Ingredients

  • 300 g rice flour
  • Water, salt and 1 tablespoon of annatto oil
  • 200 g grated green papaya (or finely shredded cabbage)
  • 200 g longganisa or fresh chorizo
  • 6 eggs
  • Oil for frying
  • Cane vinegar with garlic and chilli for dipping

How to make it at home

  1. Knead the flour with the water, salt and annatto oil into an orange dough that can be rolled out.
  2. Roll out a thin circle on a banana leaf or paper, add papaya and crumbled longganisa and crack an egg on top.
  3. Fold it in half and press the edges to seal.
  4. Fry in hot oil until crisp.
  5. Serve with the garlic and chilli vinegar.

The trick: With the banana leaf underneath it’s easy to fold without tearing.

Where and what to eat

To eat like a local: the carinderia (local canteen). The dishes you can’t miss are in the Philippines guide.
