Andrajos

A winter stew from Jaén with pieces of flour dough (“andrajos”, meaning rags) cooked in a broth of tomato, pepper and salt cod or hare.

  • Serves 4
  • 1 h 15 min

Ingredients

  • 200 g flour
  • Water and salt
  • 300 g desalted salt cod
  • 1 onion, 1 pepper and 2 tomatoes
  • 2 garlic cloves
  • 1 teaspoon of paprika and a few strands of saffron
  • Mint and olive oil

How to make it at home

  1. Knead the flour with water and salt, roll it out thinly and cut it into irregular pieces.
  2. Make a sofrito with the onion, pepper, garlic and tomato, and add the paprika and saffron.
  3. Cover with a litre of water, add the flaked cod and simmer for 10 minutes.
  4. Add the andrajos and cook for 10 minutes more, until tender.
  5. Serve with a few mint leaves.

The trick: With hare or rabbit, it’s the hunting-season version.
