Tortillitas de camarones (shrimp fritters)

Wafer-thin, crispy chickpea-flour fritters with whole tiny shrimps, from the Bay of Cádiz. The thinner, the better.

  • Serves 4
  • 30 min

Ingredients

  • 200 g whole raw tiny shrimps (or brown shrimps)
  • 100 g chickpea flour
  • 50 g plain flour
  • 1/2 spring onion, very finely chopped
  • 1 tablespoon of chopped parsley
  • 250 ml very cold water
  • Salt and olive oil for frying

How to make it at home

  1. Mix the two flours with the salt, spring onion and parsley.
  2. Gradually add the cold water until you have a runny batter, like crêpe batter. Leave to rest in the fridge for 1 hour.
  3. Stir in the shrimps just before frying.
  4. Drop spoonfuls of batter into very hot oil and flatten them so they’re very thin. Turn them over when golden.
  5. Drain them on paper and serve freshly made.

The trick: A very runny, cold batter is what makes them thin and lacy.
