Pipirrana

Jaén’s summer salad: finely chopped tomato, pepper and onion with a pounded dressing of garlic, egg yolk and extra virgin olive oil.

  • Serves 4
  • 20 min

Ingredients

  • 4 ripe tomatoes
  • 1 green pepper
  • 1/2 onion
  • 2 hard-boiled eggs
  • 1 garlic clove
  • Extra virgin olive oil, vinegar and salt
  • 1 tin of tuna (optional)

How to make it at home

  1. In a mortar, pound the garlic with salt and the yolks of the hard-boiled eggs.
  2. Gradually add oil until you have a paste, plus a splash of vinegar.
  3. Finely chop the tomato, pepper, onion and egg whites.
  4. Mix everything with the dressing and the tuna, and leave to rest somewhere cool.

The trick: Don’t skimp on the Jaén olive oil: it’s half the dish.
