Saffranspannkaka

Gotland’s dessert: a baked rice pudding with saffron and almonds, served with cloudberry jam (or blackberry) and cream.

  • Serves 6
  • 1 h 15 min

Ingredients

  • 150 g pudding rice
  • 1 l milk
  • 1 g saffron
  • 3 eggs
  • 80 g sugar
  • 50 g chopped almonds
  • 200 ml cream
  • Blackberry or raspberry jam and whipped cream

How to make it at home

  1. Cook the rice in the milk over a low heat for about 30 minutes, until creamy. Leave to cool.
  2. Crush the saffron with a little sugar and dissolve it in the cream.
  3. Beat the eggs with the sugar and mix with the rice, cream and almonds.
  4. Pour into a greased dish and bake at 175 °C for about 40 minutes, until set.
  5. Serve warm with jam and whipped cream.

The trick: It’s Gotland’s Christmas dessert, but it’s eaten all year round.

Where and what to eat

To eat like a local: a husmanskost place (home cooking). The dishes you can’t miss are in the Sweden guide.
