Shivit oshi

Khiva’s green noodles, made with dill in the dough and topped with a meat and vegetable stew and yoghurt. A dish you’ll only find in the Khorezm region.

  • Serves 4
  • 1 h 30 min

Ingredients

  • 400 g flour
  • 1 large bunch of dill
  • 1 egg and water
  • 400 g beef or lamb, diced
  • 1 onion, 1 carrot, 1 potato and 1 pepper
  • 2 tomatoes
  • Cumin, salt and pepper
  • Plain yoghurt

How to make it at home

  1. Blend the dill with the egg and a little water and knead with the flour to a firm green dough.
  2. Roll it out thinly and cut it into noodles.
  3. Stew the meat with the diced onion, carrot, potato, pepper and tomato, with cumin, for 40 minutes.
  4. Cook the noodles in salted water for 3 minutes.
  5. Serve the noodles with the stew on top and a spoonful of yoghurt.

The trick: Plenty of dill: it should be a deep green.
