Samsa

Triangular puff-pastry pasties filled with lamb and onion with cumin, baked in a tandir. They’re sold hot in Tashkent’s bazaars.

  • Serves 12
  • 1 h 15 min

Ingredients

  • 500 g puff pastry
  • 500 g lamb, finely chopped by hand (with some fat)
  • 3 onions, chopped
  • 1 teaspoon of cumin seeds
  • Salt and black pepper
  • 1 egg yolk
  • Sesame seeds

How to make it at home

  1. Mix the meat with the onion, cumin, salt and pepper.
  2. Cut the puff pastry into 12 cm squares.
  3. Put a spoonful of filling in the centre and fold the corners inwards to form a triangle.
  4. Place them seam side down, brush with egg yolk and sprinkle with sesame seeds.
  5. Bake at 210 °C for about 25 minutes.

The trick: Plenty of onion: it’s what keeps the meat juicy.

Where and what to eat

To eat like a local: a chaikhana (teahouse). The dishes you can’t miss are in the Uzbekistan guide.
