Peking duck

Beijing’s imperial dish: duck with lacquered, crispy skin, thinly sliced and wrapped in pancakes with spring onion, cucumber and hoisin sauce.

  • Serves 4
  • 3 h

Ingredients

  • 1 whole duck (about 2.5 kg)
  • 2 tablespoons of honey
  • 2 tablespoons of rice vinegar
  • 1 teaspoon of five-spice
  • Salt
  • Thin wheat pancakes (for Peking duck)
  • Spring onion and cucumber, cut into strips
  • Hoisin sauce

How to make it at home

  1. Scald the duck by pouring boiling water over it and dry it very well. Rub the inside with salt and five-spice.
  2. Brush the skin with the honey mixed with the vinegar and leave it to dry, uncovered, in the fridge overnight.
  3. Roast it on a rack over a tray of water at 180 °C for 1½ hours.
  4. Turn up to 220 °C for the last 15 minutes so the skin browns and crisps.
  5. Slice thinly with the skin on and serve with warm pancakes, spring onion, cucumber and hoisin.

The trick: Drying it in the fridge is what makes the skin crisp.
