  1. Piazza Maggiore

The heart of the city, with the Basilica of San Petronio.

  2. The Two Towers

Asinelli and Garisenda, medieval towers that are Bologna’s symbol (the Garisenda, which leans a lot, is undergoing consolidation work).

Miles of streets covered by arcades, a World Heritage Site since 2021.

  4. Archiginnasio

The university’s old seat, with its wooden anatomical theatre.

    Winter

Cold and fog in the north (Milan, Verona, Bologna) and the coast in low season, with many hotels and boats out of service.

What to do: A good time for museums and cities with fewer people; for the coast and the islands, May to October is better.

  • July, August

    Heat and high season

In July and August it’s very hot in Rome, Florence and the south, and the art cities and the coast get packed.

What to do: Start your visits early, book tickets and keep the middle of the day for resting.

Tagliatelle al ragù

What the rest of the world calls “bolognese”: a meat ragù cooked very slowly with tomato, milk and wine, which in Bologna is served with egg tagliatelle, never with spaghetti.

  • Serves 6
  • 3 h 30 min

Ingredients

  • 300 g minced beef
  • 150 g chopped pancetta
  • 1 carrot, 1 celery stick and 1/2 onion
  • 200 ml white or red wine
  • 300 g crushed tomatoes
  • 200 ml whole milk
  • Stock, oil, salt and pepper
  • 500 g egg tagliatelle
  • Grated Parmesan

How to make it at home

  1. Finely chop the carrot, celery and onion and soften them in oil with the pancetta.
  2. Add the meat and brown it well, breaking it up with the spoon.
  3. Pour in the wine and let it evaporate. Add the tomato.
  4. Simmer on the lowest heat for about 3 hours, adding stock if it dries out. Halfway through, add the milk little by little.
  5. Cook the tagliatelle, toss them with the ragù and serve with Parmesan.

The trick: Time is the main ingredient: a half-hour ragù isn’t a ragù.
