Herring in oil

Baltic herring (śledzie) marinated with onion and oil, the classic starter in Gdańsk and all along the coast. It comes with boiled potatoes and a shot of vodka.

  • Serves 4
  • 20 min

Ingredients

  • 8 salted herring fillets (matjes)
  • 2 red onions
  • 200 ml sunflower oil
  • 1 tablespoon of vinegar
  • Peppercorns, bay leaf and allspice
  • Dill
  • Boiled potatoes

How to make it at home

  1. If the herring is very salty, soak it in milk or cold water for 2 hours.
  2. Pat dry and cut into pieces.
  3. Layer the herring and onion rings in a jar with the spices.
  4. Cover with the oil mixed with the vinegar and leave to marinate in the fridge for at least 12 hours.
  5. Serve with dill and buttered boiled potatoes.

The trick: With soured cream and grated apple instead of oil, you have the other Polish version.

Where and what to eat

To eat like a local: the bar mleczny (milk bar). The dishes you can’t miss are in the Poland guide.
