Obwarzanek krakowski

Kraków’s twisted bread ring, boiled before baking and topped with sesame, poppy seeds or salt. It’s been sold from carts all over the city for more than 600 years.

  • Serves 10
  • 2 h

Ingredients

  • 500 g strong bread flour
  • 7 g dried yeast
  • 280 ml lukewarm water
  • 1 tablespoon of sugar and 1 of salt
  • 1 tablespoon of honey (for the boiling water)
  • Sesame, poppy seeds and coarse salt

How to make it at home

  1. Knead the flour with the yeast, water, sugar and salt into a firm dough. Leave to rest for 1 hour.
  2. Divide into 10 pieces, roll each into two thin ropes, twist them together and close into a ring.
  3. Boil the water with the honey and cook the rings two at a time for about 30 seconds, until they float.
  4. Drain them and cover with seeds or salt.
  5. Bake at 220 °C for about 15 minutes, until golden.

The trick: Boiling them is what gives them their shiny crust, like bagels.
