Żurek

Sour soup made with fermented rye flour, with white sausage and hard-boiled egg. In Warsaw and all over Poland it’s the Easter soup, sometimes served inside a round loaf.

  • Serves 4
  • 1 h

Ingredients

  • 500 ml zakwas (fermented rye) or 4 tablespoons of rye flour fermented in water for a few days
  • 1 litre of stock
  • 300 g white sausage (biała kiełbasa) or pork sausage
  • 100 g smoked bacon
  • 2 potatoes
  • 2 garlic cloves
  • Marjoram, bay leaf and pepper
  • 2 hard-boiled eggs
  • 2 tablespoons of soured cream and horseradish (optional)

How to make it at home

  1. Cook the sausage and bacon in the stock with the bay leaf for 20 minutes. Take out the sausage and slice it.
  2. Add the diced potatoes and cook for 15 minutes.
  3. Stir in the zakwas and let it boil for a few minutes.
  4. Add the crushed garlic, marjoram and cream; taste and adjust the salt and sourness.
  5. Serve with the sausage and half a hard-boiled egg in each bowl.

The trick: Zakwas is sold bottled in Polish shops; you can also make it at home with rye flour, water and bread.
