Toruń pierniki

The honey and ginger biscuits of Toruń, Copernicus’s city, made since the Middle Ages in carved wooden moulds. They’re dipped in chocolate or iced.

  • Serves 20
  • 1 h

Ingredients

  • 500 g flour
  • 200 g honey
  • 100 g sugar
  • 80 g butter
  • 2 eggs
  • 2 teaspoons of spices (cinnamon, ginger, cloves, cardamom, nutmeg)
  • 1 teaspoon of bicarbonate of soda
  • Dark chocolate or icing

How to make it at home

  1. Heat the honey with the sugar and butter until dissolved. Leave to cool slightly.
  2. Mix with the flour, spices, bicarbonate of soda and eggs into a firm dough.
  3. Wrap it and leave to rest in the fridge for at least 1 hour.
  4. Roll it out to half a centimetre and cut out shapes (or press into moulds).
  5. Bake at 180 °C for about 10 minutes. Dip in chocolate or ice them.

The trick: They soften over time: keep them in a tin for a few days before eating.
