Cozido das Furnas

In the Azores the pot is buried in the volcanic ground of Furnas and the heat of the earth cooks it for hours. At home, the same stew of meats and vegetables, on the lowest heat.

  • Serves 6
  • 4 h

Ingredients

  • 500 g stewing beef
  • 500 g pork ribs
  • 2 chicken thighs
  • 1 chorizo and 1 black pudding
  • 1 cabbage
  • 4 potatoes and 2 sweet potatoes
  • 3 carrots
  • 1 turnip
  • Salt

How to make it at home

  1. Put the meats at the bottom of a large pot, then the sausages.
  2. On top, place the vegetables in large pieces, finishing with the cabbage leaves.
  3. Salt and add just one glass of water: it cooks almost in the steam.
  4. Cover tightly (you can seal the lid with foil) and cook in the oven at 140 °C for about 4 hours.
  5. Serve the meats and vegetables on a large platter.

The trick: In the ground it cooks for about six hours: here, the slower the better.
