    Heat inland and high season

In July and August it’s very hot in the Alentejo and the Algarve gets crowded.

What to do: Book well ahead on the coast and keep the middle of the day for the beach or a siesta.

Açorda alentejana

The Alentejo’s humble soup: stale bread, garlic, coriander and oil, with boiling water and a poached egg. In Évora it’s eaten all year round.

  • Serves 4
  • 20 min

Ingredients

  • 300 g stale country bread
  • 4 garlic cloves
  • 1 large bunch of coriander
  • 4 eggs
  • 4 tablespoons olive oil
  • 1.2 l water
  • Coarse salt

How to make it at home

  1. Pound the garlic, coriander and coarse salt in a mortar into a paste.
  2. Put it in a tureen with the oil.
  3. Bring the water to the boil with salt and poach the eggs in it for 3 minutes.
  4. Put thin slices of bread in the tureen and pour the boiling water over them.
  5. Add the poached eggs and serve straight away.

The trick: Plenty of coriander: it’s the taste of the Alentejo.
