Bunny chow

Half a loaf hollowed out and filled with curry: the creation of Durban’s Indian community, now eaten all over South Africa. The piece of bread you remove becomes the lid for dipping.

  • Serves 4
  • 1 h 30 min

Ingredients

  • 2 whole unsliced sandwich loaves
  • 800 g diced lamb or chicken
  • 2 diced potatoes
  • 1 onion
  • 3 tomatoes
  • 1 tablespoon of grated ginger and garlic
  • 2 tablespoons of Durban masala (or hot curry powder)
  • Cinnamon, cardamom, curry leaves
  • Oil, salt and coriander

How to make it at home

  1. Fry the whole spices and the onion in oil until golden.
  2. Add the ginger, garlic and masala, then the meat, and brown it.
  3. Add the tomato and a little water and cook covered for 45 minutes; add the potatoes and cook for 20 minutes more.
  4. Cut each loaf in half and scoop out the crumb, leaving a thick wall.
  5. Fill with the curry, put the crumb on top as a lid and finish with coriander.

The trick: It’s eaten with your hands, starting with the lid dipped in the curry.
